lots of cars where the servo is mounted directly behind the pedals have a slight hissing sound if you listen carefully for it... lots of people don't notice it until they have a problem and are deliberately listening for noises.
It makes the noise when pressing the pedal only due to the vacuum being depleted.
It does not stay under vacuum which is why when the engine is off after a few presses of the pedal the vacuum is depleted and the pedal hardens up.
It does not sound like a servo problem, because stated opposite happens.. pedal firms up.
Fact it goes to the floor indicates possibly a leak on the system somewhere or the master cylinder.
Do a visual check around the calipers/wheel cylinders and hoses for any obvious leaks.
