If this is the same as my Megane, this display is 'number of miles you can travel before you need to refuel' - i.e. the range the car can travel on current fuel levels.
This is worked out based on your current fuel consumption in mpg (which you've also reset) and it takes a while to settle down. If you drive like you're driving Miss Daisy (easy on the pedal!) then the range display you're talking about will increase as your efficiency increases. Try flooring the accelerator in a low gear and watch it go down!
The longer you drive without resetting the displays, the more accurate this becomes as it is an average mpg.
