Regarding the rear pad ware, to be honest you can't expect any comeback on that considering the miles covered. I appreciate most of your miles have been on motorways but they don't know that, they only have your word.
The rear calipers shouldn't fail (Not be able to be wound back) on a 4 year old car at 37,000 miles.
However if the pads are down to the steel the heat transferred to the caliper can be excessive and can damage internal seals. This is what they would say and use this against you if you escalate the complaint.
If the pads have went to the steel you need to examine the discs as they may need replacing if there is excessive scoring.
The thread at the link below explains how to release the auto handbrake and shows what's involved when changing the rear pads on a Scenic II , I assume the mkIII will be along the same lines.
