If goin to the trouble of drilling new holes you could also use large self-tappers. When I had my Lag II I used self-tapping bolts which had large heads and rubber washer inserts. These are used widely in the construction industry for securing external cladding on warehouses and the like. I was able to pick up a few from my local builders merchants (see attached picture for sample).

When you have the tray removed why not cut a rectangular door in-line with the sump plug and secure it with cable ties - one at each corner. Then each time you do an oil change just cut two cable ties - open the door and away you go.
