No no no,do not move the striker plates!!
The striker plates probably arnt your problem the doors are.Because of the weight they will often drop.Try holding the door up as you shut them with the windows slightly down,if they close well then the door is what needs adjustment.
The only time the strikers need adjustment is if the door is out of line with the rest of the body work,but that is unlikely without a crash.
You do that by getting a good solid piece of wood and a jack.
Make sure the striker plate is where it was then...
Open the door as much as you need to to be able to work but no more,and put the wood on the flat bit under the door as near to the door skin as possible,then jack the door up enough to gain what you need.without experience do it in small stages till you get what you need.
Its how factorys do it.
