Just don't use boiling water, give it half a minute or more to calm down, then pour it over the coffee (quote roughly ground, 1/3 of a mm), stir it, cover and leave brewing for about 3 - 4 minutes. Then press and enjoy :D

Was on a coffee plantation in Costa Rica a couple of months ago and this is exactly how he prepared it but without the press. Hot water as above poured over ground coffee, left to stand for a couple of minutes. The floating grounds etc on top keep the aroma in. Then mix it all and pour through a cotton filter (he said NEVER use paper as it absorbs the fragrant oils). Delicious.

It was hard getting over my addiction to the Hokey Cokey, but I've turned myself around and that's what it's all about.

I went to Portugal a few years ago, coffee was splendid and you usually got a refill with your breakfast
