If you're after retro-fitting the factory option sat-nav, then you're looking at an incredibly difficult job, requiring at least some custom wiring and knowledge of the vehicle's electronics, and ultimately leaving you with a system that you'll find very disappointing funcionally after TomTom.

A good compromise is a replacement stereo that includes sat-nav. There are some pretty good units around these days, but be sure to try before you buy, as TomTom is still a pretty tough act to follow. Also, while they're not a straight 'smash and grab' they're still far from impossible to steal.

Or bite the bullet, buy another PND, and make sure it doesn't get nicked this time. Many of the newer ones aren't quite so bulky and don't rip holes in your pockets when you carry them around. PND's are more flexible in so many ways, including custom POI (speed cameras etc.) and the ability to use them in another vehicle (which of course is the major down-side when it comes to theft.) For the price of a decent in-dash system, you could probably buy at least three TomTom One units. Even if two more got stolen, you'd still be better off.
