Thanks all for input.
I agree air in ABS is a possible cause as is sticky valve in the abs block. A renault dealer diagnostic found a 'possible internal fault' in the ABS & they quoted 1800 for a new pump supplied & fitted. They were suspiciously vague & I don't trust them an inch. A 2nd diagnostic after a new master cyl fitted found no brake faults at all! inc ABS
The brand new master cyl strangely seemed to help slightly for a few weeks. but the sinking has returned.

Placing a slightly tightened hose clamp around the servo to engine pipe to reduce its diameter & hence the power of the vacuum seems to stop the sinking completely & bakes feel less spongy. My question is could a fault with the servo cause a sinking pedal or would it ALWAYS make the pedal harder? Could the brakes be overboosted?
