You're right about the other electrics on the car working with the ignition off. The electric windows give you a 'One Shot' opportunity to close them once you have taken the keys out of the ignition, they stop after the courtesy light has come on. I think the electric windows are adequately protected by the fuse / relay combination.
The issue regarding insurance is very valid though, the small print in a lot of policies does state that fires caused by vehicle electrical systems are specifically not covered. Almost makes the whole insurance pointless!
