Whats on top of my battery?

So my battery is flat in my van Renault Trafic 2007, it wont start. So i need to replace it.
Not done much work to cars in the past and all these cables on connected to the battery rised a few questions.

Any advice how I can remove them? Can I just put the same stack on a new battery?

Under the leaf in your picture, is a standard battery clamp (10mm spanner). Change as normal, disconnecting -Ve first & refitting last. That whole assembly will come off in one piece, cables thereon are best left undisturbed. Do check them for tightness though.
Check too, charging, Tragic Alternators have a hard life, due to the thermoplungers.

The leaf was a bit miss placed was it not :P

So if I need to jump start this Van where do I put the clamps? Is it on that metal piece that is point up just above the leaf?

Yes, Battery Connectors are best technically, but if not, Clamp onto the BussBar. Best place then is where your clips DON'T touch the bodywork.

When i changed my battery i was a bit dubious about all that stuff on top of my battery
The whole lot just clips onto the top edges of the battery, as said above, disconnect negative first then the positive, unclip the fuse bank & carefully move it out of the way.
Refit in reverse sequence.
