With my Clio, if the engine was hot (ish) when I parked the fan would come on presumably in response to the hot water collecting in the rad, so the fan came on for a couple of minutes until it is cut out by the sensor.
I would think that this would not happen when the car is left parked up as it is unlikely that the rad sensor will reach the required temps.
