The bolts retaining the disc to the hub are not a critical saftey fitting - they just hold the disc in place when the wheel is removed so one bolt it sufficient.

Bleeding brakes should always be carried out according to the recommended procedure for your car. Fluid spraying everywhere makes me think you didn't use a proper bleeding tube so it is most likely air has got into the system hence the poor feel to the brake pedal.

Now just pray you haven't fried the internal seals after toasting the bleed nipple.
