I can see a number of problems with this:
1) The panel is built into and controlled by the instrument cluster. You'd have to heavily modify the cluster to override the standard inputs.
2) The composite video output of a camera isn't going to be compatible with the inputs of the display. You'd need to build a custom transcoder and driver.
3) The display is pure black and white without even shades of grey (it may appear multi-coloured, but that's just down to backlighting - it's only ever black and a single colour at any given time.) It's also very low resolution. Between these two factors, I reckon a 'live' image shown on the display would be unrecognisable.
Definitely a non-starter, I'm afraid
