Make absolutely sure the pistons are going back and are free, make sure there is nothing on the piston back of the pads and calliper that is stopping the pads moving freely, and the callipers are free to move on the pins.
Put a very fine trace of copper slip on the back of the pads.

Who would design a vehicle that falls over when you stop?
