If a temp sensor is out it should show up as a diagnostics fault code. If so, ECU can't know the temp of the engine, although it may be able to make a guess and fuel accordingly, but I'm not sure about that.

^ This could be thermostat not closing properly ~ tend to start doing that when they get old.

But also, could just mean a connector has been pulled off.
