Well lets start at filling up the Header Tank, (With a cold engine), you fill it up to the mark only on the side DO NOT fill it up to the top (Or some will be ejected when it heats up).
After the engine has been running and it's got warm/hot the pressure in the cooling system builds up ( Which it should do ).
This is because water will boil at 100 Degrees centigrade, BUT water under pressure will boil at a Higher temperature,
which is just what the car manufacture want, so that's why it's pressurised.

If you see water being ejected most of the time ( and it will empty most of the cooling water and damage the engine ) It means you have a blown cylinder head gasket.

It's NOT a good idea to take off the filler cap of any cooling system when it's hot ,

If you have to take the filler cap off when it's hot, you place a cloth over it and turn it slowly to release the pressure.
The cloth is to stop any water going onto your face/body at 120 deg C.
