I had a similar problem when doing an oil change for the first time after I got my Lag. Had to angle grind the heads off a few of the bolts where the caged nut was just turning.

Managed to remove the caged nuts and put a new (stainless!) M5 bolt through the cross member and tightened a nut / washer on it to fix it in place. I then offered up the undertray and used another nut / washer to secure the undertray.

I realise that a self tapper would be as good, but I never like trusting undertrays to self tappers - used to have a Mondeo that lost self tappers from the undertray for a pastime - not a nice noise when the tray drops at a lot more than 70!! .
