When you freed it off, did you hold the load sensing valve in the open position.
Try this, force the valve open, by pulling on the lever, get someone to pump the brake pedal, until it goes hard.
For your handbrake, did you de glaze the linings, and drums, as in rubbing the shoes and drums with coarse wet and dry. ( be careful of the dust off the drums and linings )
If your rear brakes have not been working for a while, the glaze on the linings and drums, stop any real gripping effect...
When you test your handbrake, you should be able to tighten the rear wheels up, with the handbrake pulled on, with the car still jacked.

I think, aesthetically, car design is so interesting - the dashboards, the steering wheels, and the beauty of the mechanics. I don't know how any of it works, I don't want to know,
