hi and welcome to the forums
it sounds like a loose hose between the air intake and the (brake)master cylinder/servo (the big round thing at the RHS rear of the engine bay. it uses the suction from the air intake of the engine to power the brakes, sometimes the rubber collar where the hose plugs into shrinks or gets knocked and starts to leak air into the servo(the hissing your hearing).
also, check to see that everything is secure, if a nut has come loose it might be moving a bit when you press on brake/clutch.
