Car batteries do not like to be left stored "uncharged" - ideally they should be fully charged, and possibly even discharged evry few months and re-charged just to cycle them. Another alternative would be to leave it on trickle charge.
If your battery is 3 yrs old it is still probably pretty good, not as good as a new one but probably ok.
If I were you I would probably use the new battery and store the "old" one for emergency use. That way if in 2 yrs time you come to use it and its knackered at least you will have had 3yrs use out of it. Whereas the new one will have been unused and may be useless if not stored correctly.
