Having steep hills around could be to your advantage.

I do my own servicing and I have a steep drive, it is just the right inclination to let me drive my car on to a pair of ramps and when I have done this the car is perfectly level.

I let the oil drain out for at least 2 hours whilst I do the rest of the servicing, a garage would let the oil drip for about 2 seconds thus leaving quite a bit of oil in the sump.

You would be ok using an extractor but I would not be satisfied doing it that way.

On an old car I had many years ago it burnt so much oil I never changed the oil at all.

A problem well stated is a problem half solved !
Currently in davesss's garage:
2002 Laguna Sports Tourer 1.8 Dynamique Moondust VF1KGOB, Fiat Siecento Micheal Schumaker, Kawasaki KLE M/Cycle and a cheap Mountain Bike.
