It may also be worth giving the cabin temp sensor (mounted in a pod behind the interior rear view mirror) a clean and ensure it is still working. The air-con will also change depending on the sunlight shining on the top of the facia. The wee black circle in the centre of the facia senses sunlight temp. If you cover it with a wadge of 20 notes it will tend to go haywire
On the other hand it just could be the ambient outside temp sensor or its electrical connections have gone belly - has it had a thump that you know of??
