clio mk1 dashboard 'issue'

hi folks, i recently installed a 'new' dashboard into my car as the old one was worn out and had very few details.
some of the new info i get from my 'new' dash is the oil gauge.
thing is when i put the key in position one it looks like this

which seems as though the oil level is too low

when i start the engine it drop to the very bottom like this

yet when i pop the bonnet and check the oil via the dipstick it says it has plenty!!!

do i have a dodgy gauge
a dodgy sensor sending wrong info to gauge
or some sort of blockage making the dipstick 'read' ok?

how do i find out which it is???

also please notice in the 1st pic my temperature gauge, is this around the 'normal' running temperature for a mk1 phase 2 paris rl 1.2?
i had only covered about 15 miles in it before taking the pictures!!
