As mentioned, double clutching isn't necessary in modern vehicles. The theory is that you dip the clutch and get into neutral and let the clutch out again, then you get the engine revs to the correct speed for the next gear (either up or down), then you re-engage the clutch again to enter said gear, and let the clutch back out again.

Try it without the actual double clutching - it makes your gearchange much smoother. ie say you're going from 5th to 4th gear - dip clutch, rev slightly, let clutch back out again at correct revs.
