So why do diesel cars get water into their fuel system much more than petrol ones then.
They don't, it's just that water in diesel engines is a lot more damaging. In petrols you don't bother to decant it off as it is not needed.
The water enters the diesel through many means, but it certainly isn't hygroscopic (which is clear through it's chemical structure) and the fact it separates in the tank (and in the filter).
