Could be the temp sender as the engine could be under-fuelling when cold. It may be worth checking out its connections as some have a tendency to corrode. Give them a clean up and see what happens. If you have a multimeter you could check out the sensors resistance. There ought to be a distinct difference between when it cold as to when it's hot.
