They shouldn't have to touch the pressure sensors at all. They're fixed to the valve, so unless the fitter is daft enough to try and replace the valves, there shouldn't be a problem. Most places are aware now, but double check that they don't swap the wheels around (if they're already in the wrong places, ask nicely if they'll swap them.) It's not a big deal, but the system will warn you that the incorrect tyre has a puncture if the wheels aren't put back on the right corners. The valves are colour coded with a small ring (you may need to clean off the road dirt) and these must correspond with the diagram that should be visible when you open the driver's door.

You may end up needing new valves if you have metal caps and they've corroded on. It's also possible for the pressure sensor to break loose inside the tyre, and while it throws out the wheel balance, the fault only really becomes apparent when it's time to change tyres. Both cases will require a new valve and the system reprogramming by someone with specialist kit.
