In sound slike the car is going into limp mode and then it resets itself after a switch-off and switch on. The fuel injection warning light can illuminate for numerous reasons - even water in the fuel or duff glow-plugs can cause it to illuminate.
You may need to get the fault codes read to find a clue as to what is actually happening.
In the meantime you could cheack all under bonnet levels and electrical connections are clean and sound - especially the battery terminals
