Release the handbrake cable adjustment fuly off first and then disconnect the cables from the calipers - that way you minimise damaging the internal self-adjusting mechanism.
The most common method of retracting the pistons is clockwise. They can be a bit difficult at first but usually continue to move freely afterwards. I have seen mechanics use pointy nosed pliers for the same job and get away with it
Once the pads and clips have been replaced refit the calipers - pump the brake pedal numerous times (about 16 pumps usually). If all feels well then connect up the handbrake cables and adjust as necessary checking the pads ain't binding.
