You seem so motivated to fix this that it is quite hopeless to even try to work you through it. Its a 11 years old car and depending on its history you must expect certain repairs on it.
Assuming you have the old style where it says "Jaeger" to the right on the panel you definitive have a speed sensor on the gearbox telling the current speed. I would check connections there first.
You also have a direct connection from to the fueltank gauge to the instrument panel. I would assume either connection fault or faulty gauge in the fuel tank.
Zik-zak might occur even if you state the car to A1 - this is most probably coming from the engine computer but since you are very secret on what engine and gearbox this car have it would be impossible to even guess what might be wrong.
