Renault changed the specs a lot, so it depends on what year you're looking at. I have a brochure dated October 2001, so if you're looking at that era, here's the main advantages of the Privelege over the Dynamique

Xenon headlamps (difference on hatchback only - both models have them on the tourer)
Climate control & Heated mirrors
Folding mirrors
Rear parking sensors (tourer only)
Driver & passenger sun visors with illuminated vanity mirrors (woo!)
Time delay courtesy lights
Driver's map reading light
Rear map reading light (why make back-seat drivers' lives any easier?)
Door storage with lid
Under-seat storage
Voice synthesizer
120 watt single slot CD stereo system with in-boot 6 disc changer (vs 60 watt single slot only on Dynamique)

At the time this brochure was printed, the Dynamique, Privilege and Initiale all had 17" alloys, but they were dropped from the Privilege and Initiale somewhere in late 02/early 03, so don't be surprised if a later car has 16" wheels. Cruise control was originally on all automatics and the Initiale Manual, but an option on everything else. ESP (at this time at least) was only standard on the Initiale or models with 2.0 or 3.0 petrol engines.
Currently in Horatio's garage:
2010 Laguna III Initiale.
