Exchange parts are perfectly fine to use and much better than brand-new pattern parts, as they are to Original Equipment standard, and come with exactly the same warranty.
You may well find as your car is no longer in production that many of the consumable components are only available on this exchange basis - unless they are still used on other models still in production.
Think of it like returning a glass lemonade bottle which has a deposit value associated (therefore your broken part gets returned & refurbished for someone else), and it keeps costs down, and spares available.
Regarding the stock ordering, Ford had three levels (names escape me at the moment), but there are regular stock orders, short-notice orders, and rush orders (these aren't the correct names).
The parts price varies according to how urgently they are needed, so some garages have been known to place an order on the lowest priority just to maximise the profit from the job (not that I'm saying this has happened here).
Ask the dealer for a delivery date, that should've been provided if the part is in dtock, and not on backorder (i.e. out of stock).
This job should never be complete - the day I think I've done it all, is the day I resign.
