Most mechanics just use a self tapper and in some cases don't even bother replacing it. Essentially the disc is held in place by the wheel - it takes very little to hold the disk in place whilst changing the wheel. In fact some cars don't have such bolts at all - just a sinle restraining star washer pressed down over the wheel stud where appropriate.
my focus doesnt have anything holding the disk to the hub which i thought was strange at first but ive seen a few cars that have nothing.
if you have a dremel type tool you could always try cutting a slot on the head of the screw and use a large flat screwdriver to remove it.
