TBH, when the paint is that age, many differences can be due to the ageing process caused by UV light, and exposure to the elements.

IMO as long as the donor car has the same paint code (i.e. you aren't comparing a 'solid' paint with a 'metallic'), I'd be inclined to proceed, as even a freshly-painted panel will look different (and even more so, I'd say).
