If you look around the back of many garages you'll find loads of engine undertrays.
It possible the undertray or its bolts have given trouble but they should have informed you of the problem.
I would not recommend driving without one - I have seen engines totally destroyed because debris can get sucked into the engine bay causing damage to the timing belt, etc.

Sadly many mechanics think they are not needed - fools they be.
