Another update:

I have the car booked into a local Renault specialist on Tuesday, however I have noticed something weird with the car over the past few days...

The problem seems to have resolved itself. By that, I mean I no longer see the massive fluctuations on the temperature gauge (i.e. the gauge diving to the lowest point), I no longer feel/experience the lumpiness/loss of power/unwillingness to accelerate, and I haven't experienced the revs-dropping-to-zero problem when I come to a stand still. I have put about 100 miles of varied driving on the car.

I'm still going to get the CTS sensor changed as a matter of caution, as well as cam belt + ancillaries (it's due anyway).

Any ideas as to why the problem "seems" *touches wood* to have resolved itself?
