A neighbour of mine removed the undertray from his Puegot van - 3 months later the auxilary belt failed due to road debris - it then took the timing belt with it. The vehicle only 20K miles and was only 18 months old.
The undertray does reduce engine noise. Without it noise from the engine is reflected form the hard road surface whereas the plastic undertray does absorb such. So in effect one made of aluminium may incease engine noise or even resonate. Although there is no reason why it couldn't be insulated in some way.
When making one I think the hardest bit would be getting the correct shape an ensuring there are no gaps, etc, - especially without a template.
