When you open the bonnet, look for the switch that detects the bonnet open; you can then put a thumb on that, so the alarm thinks the bonnet is shut, and it will shut up again.
Next stage (slightly more permanent) is to disconnect the cables from the back of it; this will remove the circuit from the alarm system. Fix the wires somewhere safe (so it doesn't drop into the fan, etc) and you can work quietly, even at night.

Be aware that robbing scrotes will also be able to do so, and so restore the system to nominal as soon as possible.
