You may be able to solve this by purchasing a new set of adjusters? The bendix brakes are decent enough and i wouldn't bother changing them just for this.
Im not sure if they backing plates are unique to each brake set up but im sure someone will know.
As for the brake pedal tavel, is there any signs of brake fluid leaking?
Check the rear wheel cylinder seals by carefuly lifting them back with a small screw driver and check for fluid, any sign of fluid means theres a leak.
