I've never had to do it myself, but I would disconnect both ends, tightly tie some fishing line to one end of the cable (the pedal end), and pull the cable through (from the engine side).

I'd then attach the new cable to the fishing line and pull it back through the bulkhead.

I would in addition to tying the fishing line to the cable, use a couple of cable ties to ensure it won't slip off the cable.
