I meant winding back the piston caliper with the old brake still in its original position, i.e. still held in the caliper piston.....

Using a G-clamp with the pad inverted so the friction side faces the piston helps prevent damage to the piston.
On cars with ABS it is recommended to open both the bleed screw and the brake fluid reservoir when retracting the caliper piston otherwise there is a risk of damaging the ABS control unit. A brake hose clamp will also help prevent fluid going in the wrong direction.
