Wow that must have caught your attention!
I had similar once on a Volvo 360. It would turn OK and then half way round the bend it would suddenly straighten up a few degrees all by itself. I remembered a few weeks earlier I had turned off the A1 late at night onto a rural road near home and it was covered in ice. I has slid into the verge. I was able to drive on and thought no more about it.
When I checked the impact had nudged the steering rack and the clamps on the front cross member had loosened causing the rack to move a few mill under load.
Take a look at all the anchor points of rack and steering column and look at condition of track rod ends.
Get somebody to turn the steering wheel back and forward while you look for movement at the track rod ends. You definitely want to solve this one before you take it back on the road.
