As the title suggests..

Fuel issue my limited logic tells me..

But it's strange..

In the mornings, I maybe need to try 2, 3 times for a start.
But then, the first 2 kms,
She feels like she wants to give up, change gear, higher revs, perks right up.
Change gear again, give a bit of gas, lovely..

Fuel filter,,,,, maybe.

But how would that explain the 5 minutes I spend getting her to start in the evenings..?

I the evenings, I mean after she's sat in the sun all day..
She doesn't start good when it's been a hot day..

Well, if it's red, then there are two types of 1,4 engines.
Both have electric fuel pumps and multipoint injection.

Regardless, many possible causes.
Idle valve, ignition coil and spark cables for bad driving, crank sensor or fuel pump return valve for bad starting.

Fuel return valve is in rezervoar together with fuel pump.
Maybe you have a leaking injector causing all this problems but that requires some tools and decent amount of time.
Crank sensor is worth changing if bad start conditions are changing. Sometimes engine starts like new, in 2 seconds, sometimes you have to crank 5 minutes to get it started.
