I have a 2001 V6 Privilege Sport Tourer. Can anyone please tell me what colour the back lighting is supposed to be on the dash?

No it isn't it's black, because it's not so much a 'light' as a 'dark sucker', the more dark it sucks the brighter the surrounding area appears.
I always use dark suckers rather than bulbs, they're far more efficient.
